Robert "Frosty" Winterbottom's 2022 OTICC Championship Recipe


FROSTY’S FAMOUS CHILI

 

2 lbs. 80/20 Ground Chuck
1 can Swanson Beef Broth (Full Salt)
1 can Swanson Chicken Broth (Low Sodium)
1 8 oz can Hunt Tomato Sauce (Low Sodium)
2 Serrano Peppers

1 Meatball (1/3 of the roll) Jimmy Dean Hot Sausage

 

Make 6-8 meat patties and LIGHTLY season with onion powder and garlic powder and gray in 1 TBS olive oil in skillet and continue cooking. Drain well when done and set aside. While meat is cooking, in separate pot, combine the beef broth, ½ of the chicken broth and Sausage Ball and bring to a boil then low simmer for 15 minutes. Add 1st dump of spices. Simmer for 10 minutes to let spices dissolve well then add tomato sauce and serrano’s (poke holes) and bring to a gentle boil for 5 minutes.

1 T Mild Bills Cowtown Light

1 T Mild Bills EC Special Chili Powder

1 T HEB Fiesta Fancy Light
1 T Mild Bills Onion Powder

1 T Mild Bills Hungarian Paprika
1.5 tsp Mild Bills Garlic Powder

¼ tsp Mild Bills Serrano Powder
2 tsp Knorr Chicken Granules

2 tsp Knorr Beef Granules

¼ tsp Natural Sea Salt


Let your 1st Dump, liquid sausage ball and serrano’s boil for 5 minutes then separate your meat patties in ¼ pieces and add. Cook on a very low boil for 30 minutes. After 30 minutes REMOVE the Jimmy Dean Sausage and squeeze and REMOVE serrano peppers. With scissors, cut pieces down to 1/8 size and let it rest for 1hr 25min.

2 T HEB Fiesta Fancy Light

1 T Mild Bills Cumin

¼ tsp Mild Bills Terlingua Dust

¼ tsp of Mild Bills white pepper

Pinch of Mild Bills Ground Jalapeno

Pinch of Mild Bills Terlingua Dust

1 package of Sazon Goya

1 Jalapeno

 

After 1hr 25min rest period bring chili back to a slow boil while cutting meat up to fingernail size with scissors then add remaining chicken broth (and poked Jalapeno) bring this back to a slow/medium boil. Stir the meat every 5-10 minutes. 50 minutes before turning in add 2nd dump and turn heat on low/medium simmer for 25 minutes. Turn off Chili for 15 minutes to let juice come to the top. After 15 minutes turn stove on low for a few minutes before turn in.
